Fresh spinach, remove the roots, wash and set aside. -

Boil a pot of water and boil spinach for 1 minute. Because spinach contains oxalic acid, boiling it takes longer than other vegetables to remove the oxalic acid. -

Boil the spinach and soak it in cold water. -

Pinch the water from the spinach and put it in the crisper. -

Shake up the spinach balls, add salt, sugar, 1 ounce of mushroom essence (the same goes for chicken essence), sesame oil, stir-fry white sesame seeds until fragrant, and mix well. -

After mixing well, the cold sesame spinach is ready, just put it in the refrigerator.
Tips
After blanching, rinse the spinach with cold water until it is completely cool.
