The fat and thin ones are most suitable
If you like fatter, you can buy fatter ones

Please ask the boss to cook the meat and remove the skin and hair
Go home and wash it and put it in the pressure cooker
Add a few slices of ginger and a few peppercorns
Press the steam for about 8-10 minutes , take it out after it is no longer hot to your hands

You can dry the cooked meat or blow it dry

I bought the meat early in the morning and cooked it at home
Immediately apply vinegar and salt and wait until evening

I use an old oven at home
It is not recommended to use a new oven as it will splash oil
You can also use an air fryer
Select the oven with the highest heat.Preheat at high temperature for about 15-20 minutes.
The meat is placed under the grilling net on a baking tray to catch the oil.
Put the meat in and bake for about 20-25 minutes.
The specific time does not necessarily depend on the condition of the meat skin.
(It is OK to turn on the hot air or air frying function of the oven. If not, just turn on the upper and lower heat)

Roast Put a few toothpicks on the good meat with the skin side down and soak it in cold water overnight to remove the skin. I also added a little soy sauce to help with coloring. If you like red, you can add red yeast powder.

Pour the mixed ingredients in

Mix well and set aside

Mix the dried plums, dried bamboo shoots and the minced meat trimmed when cutting the meat together, add soy sauce, salt, sugar and other seasonings, mix well and set aside

Prepare four bowls
Put the meat in with the skin facing down

Fill in the dried vegetables and bamboo shoots
You can control more or less of the vegetables

Then steam in a steamer for about 1.5-2 hours

The steamed pork belly must be cooled before pouring it out
