Wash the lamb chops and put them in cold water. -

After boiling the pot, slowly skim off the floating water. -

Add salt, green onions, ginger slices, and peppercorns. -

Simmer over low heat for about an hour. -

Finished product. Can be served with garlic or chive flowers for dipping.
Tips
1. Place the mutton in a pot under cold water and skim off the floating liquid after boiling. This step is very important. Don't skim off too much soup water. Be sure to skim it clean, otherwise the soup will become turbid.
2. Bring to a simmer over low heat. Only add onions, ginger, and peppercorns.
