Prepare ingredients: 600g white glutinous rice, 600ml water, 200ml coconut milk, 50g low-sugar bean paste filling, 200g walnut kernels, raisins, dried cranberries, appropriate amount of red dates. -

Wash 600 grams of white glutinous rice and pour it into the electric pressure cooker. -

Pour in 600 ml of water. -

Pour in 200 ml of coconut milk. -

Select the "rice cooking" function. -

The glutinous rice is ready in about 25 minutes. -

Pour 50 grams of coconut oil into the cooking basin. -

Pour in the newly cooked glutinous rice. -

Mix well while hot and then cool down for later use. -

Take a piece of plastic wrap and lay it in a bowl. On top of it, place walnut kernels, red dates, raisins, and dried cranberries as the bottom. -

Take some glutinous rice to cover it and press it gently to fix it, so that the dried fruits can be embedded in the glutinous rice. -

Put in 50 grams of low-sugar red bean paste filling. -

Gently spread it evenly, then cover it with some glutinous rice, and wrap it in plastic wrap. -

It can be placed in the freezer when it is ready, and steamed for about 10 minutes when it is time to eat. The glutinous and sweet rice pudding is a must-have on the New Year’s Eve dinner table.
Tips
1. I made 4 350g rice puddings for each of the above ingredients. You can also adjust the size according to your needs.
2. Glutinous rice is cooked in an electric pressure cooker or steamed. However, the amount of water for glutinous rice needs to be soaked in advance and the steaming time needs to be adjusted according to the expansion of the rice.
3. Coconut oil can be replaced with equivalent lard or animal butter, and the aroma will be different. Just adjust according to your own preferences.
